Learn how to make nutritious and healthy coconut bread by following this easy step-by-step recipe.  

Ingredients
  

  • 1 cup coconut flour
  • 1/2 cup desiccated coconut
  • 1/2 cup honey
  • 1 1/2 cup full-fat Greek yoghurt
  • 6 eggs
  • 1/2 bicarb soda

Instructions
 

  • Preheat your oven to 175°C or 350°F. Grease and line a loaf tin.  
  • Place the coconut flour, desiccated coconut, honey, yoghurt and eggs into your processor and blend until the mixture resembles a smooth, runny batter. Add the bicarb soda and mix to combine. Pour the mixture into your prepared tin and bake for 50 minutes. 
  • Remove the coconut bread from the oven and cool in the tin for 10 minutes before gently transferring it to a cooling rack. Allow cooling completely before cutting. 
  • Enjoy your coconut bread for breakfast, or as a side for lunch or dinner!
