Learn how to make nutritious and healthy coconut bread by following this easy step-by-step recipe.
- 1 cup coconut flour
- 1/2 cup desiccated coconut
- 1/2 cup honey
- 1 1/2 cup full-fat Greek yoghurt
- 6 eggs
- 1/2 bicarb soda
Preheat your oven to 175°C or 350°F. Grease and line a loaf tin.
Place the coconut flour, desiccated coconut, honey, yoghurt and eggs into your processor and blend until the mixture resembles a smooth, runny batter. Add the bicarb soda and mix to combine. Pour the mixture into your prepared tin and bake for 50 minutes.
Remove the coconut bread from the oven and cool in the tin for 10 minutes before gently transferring it to a cooling rack. Allow cooling completely before cutting.
Enjoy your coconut bread for breakfast, or as a side for lunch or dinner!
