- 8 shrimp, peeled and deveined
- 2 cup mixed greens
- 1/2 tsp Italian seasoning
- 1 Tbsp extra-virgin olive oil
- 1 oz cashews (optional)
Heat olive oil in a large skillet over medium heat.
Put shrimp in a mixing bowl and rub in Italian seasoning. Mix well to coat shrimp thoroughly.
Add shrimp to the hot pan and cook about 2-3 minutes on each side, turning once midway, until shrimp is pink and cooked through. Remove the shrimp from the skillet.
Mix the cooked shrimp with the mixed greens. Sprinkle chopped cashews over top if desired. Serve.
