Ingredients
2ozchickpeas, cooked
1/2clove garlic
1Tbspextra-virgin olive oil
1Tbsplemon juice
1/4Tbsptahini
Cumin to taste
Ground coriander to taste
Sweet paprika to taste
Hot paprika to taste
Salt to taste
Nigella seeds (garnish)
Seasonal greens
Roasted vegetables
Instructions
Drain chickpeas and place in a food processor. Add grated garlic clove, olive oil, lemon juice, tahini, salt, cumin, coriander, and paprika. Process until really smooth, stopping to scrape the walls of the food processor a few times.
Add water little by little to obtain desired consistency - should have more or less the consistency of mashed potatoes.
Adjust the taste with more lemon juice or salt. Transfer to a bowl and sprinkle with nigella seeds. Serve with seasonal greens or/and roasted vegetables on the side.
