Ingredients
  

  • 1 tomato, wedged
  • 1/4 English cucumber, sliced
  • 1/2 bell pepper, cored, thinly sliced
  • 1/4 red onion, peeled, thinly sliced
  • 1/4 cup Kalamata olives
  • 1 Tbsp extra-virgin olive oil
  • 1 Tbsp balsamic vinegar
  • 1 oz feta cheese, crumbled
  • Dried oregano
  • Salt and Pepper

Instructions
 

  • Cut tomato into wedges and set aside.
  • Slice cucumber, bell pepper, and onion. Set aside.
  • Plate tomato, cucumber, bell pepper, red onion, and olives on a dinner plate.
  • Drizzle evenly with olive oil and balsamic vinegar.
  • Sprinkle with oregano, salt, and pepper as desired.
  • Top with feta cheese crumbles.
