- 5 radishes, thinly sliced
- 2 cups baby spinach leaves
- 1/4 cup blueberries
- 1 Tbsp pistachios, chopped
- 1 ball mozzarella, sliced
- 1 Tbsp extra-virgin olive oil
- 1 Tbsp balsamic vinegar
- Salt and pepper
Slice radishes thinly and slice mozzarella.
Whisk olive oil, balsamic vinegar, salt, and pepper in a small bowl and set aside.
Plate spinach leaves with mozzarella and radishes.
Top with blueberries and chopped pistachios.
Drizzle with olive oil dressing or use a favorite.
