Ingredients
  

  • 5 radishes, thinly sliced
  • 2 cups baby spinach leaves
  • 1/4 cup blueberries
  • 1 Tbsp pistachios, chopped
  • 1 ball mozzarella, sliced
  • 1 Tbsp extra-virgin olive oil
  • 1 Tbsp balsamic vinegar
  • Salt and pepper

Instructions
 

  • Slice radishes thinly and slice mozzarella.
  • Whisk olive oil, balsamic vinegar, salt, and pepper in a small bowl and set aside.
  • Plate spinach leaves with mozzarella and radishes.
  • Top with blueberries and chopped pistachios.
