Learn how to make delicious and healthy Creamy Fish Soup by following an easy step by step recipe. Serves 1 person. Multiply by number of servings needed.
- 1 Tbsp coconut oil
- 1/2 Tbsp almond flour
- 1 cup fish stock
- 1/2 carrot, julienned
- 1/2 leek, julienned
- 1/4 zucchini, julienned
- 4 raw shrimp, peeled
- 4 scallops
- 1 oz catfish
- 2 Tbsp heavy cream
- 1 Tbsp fresh parsley, chopped
- Salt and pepper to taste
In a frying pan or wok, melt half the coconut oil and add almond flour. Stir without browning the flour for about 2 minutes. Add fish stock at intervals, stirring constantly. Boil gently for 5-10 minutes.
Add the remaining coconut oil and saute julienned carrots, leek and zucchini for about 15 minutes.
Add shrimps, scallops, fish and heavy cream. Simmer until fish and shellfish are tender, about 5 minutes.
Add parsley, salt, and pepper to taste.
