Ingredients
2medium beets, washed and scrubbed
1/2Tbspextra-virgin olive oil
1/4cuphickpeas, rinsed and drained
1/4cuptahini
1Tbsplemon juice
1/2clove garlic
1/4cupwater
1tspblack and white sesame seeds (garnish)
Salt and pepper to taste
Instructions
Preheat the oven to 400°F/200°C.
Drizzle beets with olive oil and sprinkle with salt. Place on a baking sheet and roast for 45 minutes, or until easily pierced with a knife.
Allow the beets to cool completely, then remove skins (should come off easily with your hands) and chop coarsely.
Add chopped beets, chickpeas, tahini, lemon juice, garlic, and pepper to a food processor. Add water and process mixture until very smooth (add more water than called for to get thinner consistency).
Garnish with black and white sesame seeds. Store in a fridge for up to one week.
