Learn how to make delicious Healthy Mango Pancakes by following an easy step by step recipe. Serves 1 person. Multiply by number of servings needed.
- 1 ripe sweet mango
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 cup almond flour
- 1/4 tsp cinnamon
- Coconut yogurt
- Blueberries
- Peach slices
- Walnuts
- Honey (optional)
Mash the mango in a large bowl until smooth. Mix in an egg and vanilla extract until well combined. Mix in almond flour and cinnamon.
Heat a skillet to medium heat and scoop pancake batter onto heated skillet. Smooth out to form an even layer. Cook until you start to see bubbles on top, about 1-2 minutes. Flip and cook until other side is golden brown, about 1-2 minutes.
Garnish pancakes with your favorite toppings! Mango or peach slices, chopped walnuts, blueberries, coconut yogurt, and/or honey.
