Learn how to make delicious and healthy Honey Berry Quinoa by following an easy step by step recipe. Serves 1 person. Multiply by number of servings needed.

Ingredients
  

  • 1/4 cup quinoa, uncooked
  • 1 cup water
  • 2 Tbsp extra-virgin olive oil
  • 1 Tbsp honey
  • 1 lime, juiced
  • 1/4 tsp sea salt
  • 1/4 cup blueberries
  • 1/4 cup raspberries
  • 1/4 cup strawberries, sliced
  • 1 oz fresh mint, chopped
  • 1 Tbsp almonds, sliced
  • 1 Tbs pistachios, chopped

Instructions
 

  • In a medium pot over high heat, add quinoa to water. Allow water to come to boil, then reduce heat and simmer quinoa until water is gone, about 10-15 minutes.
  • Remove the pot from heat and allow quinoa to cool before transferring to large bowl. Set aside to cool completely.
  • For the dressing, whisk together extra-virgin olive oil, honey, and lime juice in a small bowl. Set aside.
  • Add fresh berries and mint to the large bowl of cooled quinoa. Pour dressing over the top and gently stir together.
  • Garnish with sliced almonds, chopped pistachios, and more chopped mint, if desired.
