In a medium pot over high heat, add quinoa to water. Allow water to come to boil, then reduce heat and simmer quinoa until water is gone, about 10-15 minutes.
Remove the pot from heat and allow quinoa to cool before transferring to large bowl. Set aside to cool completely.
For the dressing, whisk together extra-virgin olive oil, honey, and lime juice in a small bowl. Set aside.
Add fresh berries and mint to the large bowl of cooled quinoa. Pour dressing over the top and gently stir together.
Garnish with sliced almonds, chopped pistachios, and more chopped mint, if desired.
