Learn how to make delicious and healthy Baked Omelette Rolls by following an easy step by step recipe. Serves 1 person. Multiply by number of servings needed.

Ingredients
  

  • 2 eggs
  • 1/4 cup almond milk
  • 1 tsp almond flour
  • 2 Tbsp shredded cheddar cheese
  • 2 radishes, cut into thin rings
  • Seasonal greens and radishes (optional)
  • Extra-virgin olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 450°F/230°C.
  • Lightly grease a baking pan with olive oil.
  • Combine eggs, almond milk, almond flour, salt and pepper in a blender. Put lid on blender and process until smooth. Pour mixture into prepared baking pan and bake in preheated oven until set, about 20 minutes.
  • Sprinkle with cheese. Carefully loosen edges of omelet from pan. Starting from the short edge of the pan, carefully roll up the omelette.
  • Place the omelette on a serving plate together with some seasonal greens and radishes.
