Learn how to make delicious and healthy Baked Omelette Rolls by following an easy step by step recipe. Serves 1 person. Multiply by number of servings needed.
- 2 eggs
- 1/4 cup almond milk
- 1 tsp almond flour
- 2 Tbsp shredded cheddar cheese
- 2 radishes, cut into thin rings
- Seasonal greens and radishes (optional)
- Extra-virgin olive oil
- Salt and pepper to taste
Preheat oven to 450°F/230°C.
Lightly grease a baking pan with olive oil.
Combine eggs, almond milk, almond flour, salt and pepper in a blender. Put lid on blender and process until smooth. Pour mixture into prepared baking pan and bake in preheated oven until set, about 20 minutes.
Sprinkle with cheese. Carefully loosen edges of omelet from pan. Starting from the short edge of the pan, carefully roll up the omelette.
Place the omelette on a serving plate together with some seasonal greens and radishes.
