Learn how to make delicious and healthy Grilled Orange Chicken by following an easy step by step recipe. Serves 1 person. Multiply by number of servings needed.
- 1/4 lb chicken breast, skinless, boneless
- 1 Tbsp extra-virgin olive oil
- 1/2 Tbsp apple cider vinegar
- 1/2 tsp soy sauce, organic, preferably low sodium
- 1/2 cup mixed greens
- 3 oz mandarin oranges in light syrup, drained
- 1/2 green onion, sliced
- 6 cherry tomatoes
- Ground ginger to taste
- Garlic powder to taste
- Salt and pepper to taste
Stir olive oil, apple cider vinegar, soy sauce, ginger, and garlic powder together in a medium bowl. Reserve 1/2 of the mixture for salad dressing.
Lightly oil grill rack and heat the grill to medium. Grill the chicken breast until cooked through. Turn and brush often using other half of the mixture, about 15 minutes.
Cut the grilled chicken breast into thin strips. Arrange salad greens, cherry tomatoes, mandarin oranges, and green onions on a plate. Top with chicken slices and drizzle with the reserved mixture.
