Learn how to make delicious and healthy Pomegranate Apple Salad by following an easy step by step recipe. Serves 1 person. Multiply by number of servings needed.
- 1/2 zucchini, cut into strips
- 1/2 apple, sliced
- 2 oz melon, peeled, sliced
- 1/4 pomegranate
- 2 oz tofu, cubed
- 2 Tbsp walnuts, chopped finely
- 1 Tbsp extra-virgin olive oil
- 1 tsp balsamic vinegar
- Salt and pepper
Place tofu on a plate, along with zucchini strips, sliced apple, and sliced melon.
Scoop seeds out of the pomegranate.
Top the salad with pomegranate seeds and chopped walnuts. Season to taste.
