Learn how to make delicious and healthy Fitness Quinoa Salad by following an easy step by step recipe. Serves 1 person. Multiply by number of servings needed.
- 1/3 cup quinoa, rinsed
- 1/4 large pomegranate
- 1 cup baby spinach leaves
- 1 cup green beans, trimmed and halved
- 2 small radishes, trimmed and thinly sliced
- Lemon juice
- Extra-virgin olive oil
- Salt and pepper
Place quinoa and 1 cup of water in a small saucepan over medium heat. Cover and simmer until quinoa has absorbed all the water. Remove from heat and allow to cool.
Arrange spinach leaves leaves on the plate and top with green beans, radishes, and pomegranate seeds.
Season with salt and pepper. Drizzle with olive oil and lemon juice.
