Learn how to make delicious and healthy Crispy Baked Cod by following an easy step by step recipe. Serves 1 person. Multiply by number of servings needed.

Ingredients
  

  • 8 oz cod fillet
  • 2 tbsp extra-virgin olive oil
  • 1/2 tomato, diced
  • 1/2 bell pepper, diced
  • 1/4 zucchini, diced
  • 1/4 cup Kalamata olives, halved
  • 1 clove garlic, finely chopped
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F/200°C.
  • Brush cod with 1 tablespoon of the oil, sprinkle with salt, and place in baking dish.
  • In large bowl, combine diced tomato, bell pepper, zucchini, olives, and garlic. Sprinkle with olive oil and salt and toss to combine.
  • Spoon mixture over cod and bake until vegetables are tender and fish is just cooked through, about 20-25 minutes.
  • Spoon some of the juices in the pan over top the cod and vegetables prior to serving.
