Learn how to make delicious and healthy Crispy Baked Cod by following an easy step by step recipe. Serves 1 person. Multiply by number of servings needed.
- 8 oz cod fillet
- 2 tbsp extra-virgin olive oil
- 1/2 tomato, diced
- 1/2 bell pepper, diced
- 1/4 zucchini, diced
- 1/4 cup Kalamata olives, halved
- 1 clove garlic, finely chopped
- Salt and pepper to taste
Preheat oven to 400°F/200°C.
Brush cod with 1 tablespoon of the oil, sprinkle with salt, and place in baking dish.
In large bowl, combine diced tomato, bell pepper, zucchini, olives, and garlic. Sprinkle with olive oil and salt and toss to combine.
Spoon mixture over cod and bake until vegetables are tender and fish is just cooked through, about 20-25 minutes.
Spoon some of the juices in the pan over top the cod and vegetables prior to serving.
