Learn how to make delicious and healthy Juicy Dijon Salmon by following an easy step by step recipe. Serves 1 person. Multiply by number of servings needed.
- 6 oz salmon filet
- 1/2 tbsp fresh parsley, chopped
- 1 tbsp extra-virgin olive oil
- 1 tbsp lemon juice, freshly squeezed
- 1 clove garlic, pressed
- 1/2 tbsp Dijon mustard
- 2 lemon rings
- 1 tomato, diced
- 2 cups mixed greens
- Salt and pepper to taste
Preheat oven to 450°F/230°C.
Line baking sheet with silpat or foil. Arrange salmon on lined baking sheet, skin-side-down.
Mix parsley, pressed garlic clove, olive oil, lemon juice, Dijon mustard, salt, and pepper in a small bowl. Generously spread the mix over top and sides of the salmon and top with a slice of lemon.
Bake at 450°F/230°C until just cooked through and flaky, about 12-15 minutes. Don't overcook.
Serve with diced tomato and mixed greens on the side.
