Ingredients
  

  • 6 oz salmon filet
  • 1/2 tbsp fresh parsley, chopped
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp lemon juice, freshly squeezed
  • 1 clove garlic, pressed
  • 1/2 tbsp Dijon mustard
  • 2 lemon rings
  • 1 tomato, diced
  • 2 cups mixed greens
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 450°F/230°C.
  • Line baking sheet with silpat or foil. Arrange salmon on lined baking sheet, skin-side-down.
  • Mix parsley, pressed garlic clove, olive oil, lemon juice, Dijon mustard, salt, and pepper in a small bowl. Generously spread the mix over top and sides of the salmon and top with a slice of lemon.
  • Bake at 450°F/230°C until just cooked through and flaky, about 12-15 minutes. Don't overcook.
  • Serve with diced tomato and mixed greens on the side.
