Ingredients
  

  • 1 ripe sweet mango
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/2 cup almond flour
  • 1/4 tsp cinnamon
  • Coconut yogurt
  • Blueberries
  • Peach slices
  • Walnuts
  • Honey (optional)

Instructions
 

  • Mash the mango in a large bowl until smooth. Mix in an egg and vanilla extract until well combined. Mix in almond flour and cinnamon.
  • Heat a skillet to medium heat and scoop pancake batter onto heated skillet. Smooth out to form an even layer. Cook until you start to see bubbles on top, about 1-2 minutes. Flip and cook until other side is golden brown, about 1-2 minutes.
  • Garnish pancakes with your favorite toppings! Mango or peach slices, chopped walnuts, blueberries, coconut yogurt, and/or honey.
