“Hard to Beet” Hummus

Learn how to make delicious and healthy "Hard to Beet" Hummus by following an easy step by step recipe. Serves 1 person. Multiply by number of servings needed.
Ingredients
- 2 medium beets, washed and scrubbed
- 1/2 Tbsp extra-virgin olive oil
- 1/4 cup hickpeas, rinsed and drained
- 1/4 cup tahini
- 1 Tbsp lemon juice
- 1/2 clove garlic
- 1/4 cup water
- 1 tsp black and white sesame seeds (garnish)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F/200°C.
- Drizzle beets with olive oil and sprinkle with salt. Place on a baking sheet and roast for 45 minutes, or until easily pierced with a knife.
- Allow the beets to cool completely, then remove skins (should come off easily with your hands) and chop coarsely.
- Add chopped beets, chickpeas, tahini, lemon juice, garlic, and pepper to a food processor. Add water and process mixture until very smooth (add more water than called for to get thinner consistency).
- Garnish with black and white sesame seeds. Store in a fridge for up to one week.
