Ingredients
  

  • 2 oz chickpeas, cooked
  • 1/2 clove garlic
  • 1 Tbsp extra-virgin olive oil
  • 1 Tbsp lemon juice
  • 1/4 Tbsp tahini
  • Cumin to taste
  • Ground coriander to taste
  • Sweet paprika to taste
  • Hot paprika to taste
  • Salt to taste
  • Nigella seeds (garnish)
  • Seasonal greens
  • Roasted vegetables

Instructions
 

  • Drain chickpeas and place in a food processor. Add grated garlic clove, olive oil, lemon juice, tahini, salt, cumin, coriander, and paprika. Process until really smooth, stopping to scrape the walls of the food processor a few times.
  • Add water little by little to obtain desired consistency - should have more or less the consistency of mashed potatoes.
  • Adjust the taste with more lemon juice or salt. Transfer to a bowl and sprinkle with nigella seeds. Serve with seasonal greens or/and roasted vegetables on the side.
