Ingredients
- 2 oz chickpeas, cooked
- 1/2 clove garlic
- 1 Tbsp extra-virgin olive oil
- 1 Tbsp lemon juice
- 1/4 Tbsp tahini
- Cumin to taste
- Ground coriander to taste
- Sweet paprika to taste
- Hot paprika to taste
- Salt to taste
- Nigella seeds (garnish)
- Seasonal greens
- Roasted vegetables
Instructions
- Drain chickpeas and place in a food processor. Add grated garlic clove, olive oil, lemon juice, tahini, salt, cumin, coriander, and paprika. Process until really smooth, stopping to scrape the walls of the food processor a few times.
- Add water little by little to obtain desired consistency - should have more or less the consistency of mashed potatoes.
- Adjust the taste with more lemon juice or salt. Transfer to a bowl and sprinkle with nigella seeds. Serve with seasonal greens or/and roasted vegetables on the side.
