Ingredients
  

  • 1/3 cup quinoa, rinsed
  • 1/4 large pomegranate
  • 1 cup baby spinach leaves
  • 1 cup green beans, trimmed and halved
  • 2 small radishes, trimmed and thinly sliced
  • Lemon juice
  • Extra-virgin olive oil
  • Salt and pepper

Instructions
 

  • Place quinoa and 1 cup of water in a small saucepan over medium heat. Cover and simmer until quinoa has absorbed all the water. Remove from heat and allow to cool.
  • Arrange spinach leaves leaves on the plate and top with green beans, radishes, and pomegranate seeds.
  • Season with salt and pepper. Drizzle with olive oil and lemon juice.
