Crispy Baked Cod

Ingredients
- 8 oz cod fillet
- 2 tbsp extra-virgin olive oil
- 1/2 tomato, diced
- 1/2 bell pepper, diced
- 1/4 zucchini, diced
- 1/4 cup Kalamata olives, halved
- 1 clove garlic, finely chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F/200°C.
- Brush cod with 1 tablespoon of the oil, sprinkle with salt, and place in baking dish.
- In large bowl, combine diced tomato, bell pepper, zucchini, olives, and garlic. Sprinkle with olive oil and salt and toss to combine.
- Spoon mixture over cod and bake until vegetables are tender and fish is just cooked through, about 20-25 minutes.
- Spoon some of the juices in the pan over top the cod and vegetables prior to serving.
