Asparagus Shallot Salad

Ingredients
- 6 oz asparagus, tough ends removed
- 1/2 oz shallots, thinly sliced
- 1 tsp rice vinegar
- 1/2 tsp red wine vinegar
- 1/2 tsp soy sauce
- 1/4 tsp honey
- 1/4 tsp dijon mustard
- 1 tsp sesame oil
- White sesame seeds for garnish (optional)
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together rice vinegar, red wine vinegar, honey, soy sauce, and dijon mustard to make dressing.
- Drizzle sesame oil over asparagus, tossing to coat.
- Grill asparagus over high heat for 1-2 minutes each side, until bright green. Thicker asparagus may take longer.
- Cut asparagus into 1½ inch diagonal slices. Put asparagus and thinly sliced shallots in a bowl and drizzle dressing over the top. Toss to coat.
- Sprinkle white sesame seeds over top, if desired.
