Ingredients
- 1 tomato, wedged
- 1/4 English cucumber, sliced
- 1/2 bell pepper, cored, thinly sliced
- 1/4 red onion, peeled, thinly sliced
- 1/4 cup Kalamata olives
- 1 Tbsp extra-virgin olive oil
- 1 Tbsp balsamic vinegar
- 1 oz feta cheese, crumbled
- Dried oregano
- Salt and Pepper
Instructions
- Cut tomato into wedges and set aside.
- Slice cucumber, bell pepper, and onion. Set aside.
- Plate tomato, cucumber, bell pepper, red onion, and olives on a dinner plate.
- Drizzle evenly with olive oil and balsamic vinegar.
- Sprinkle with oregano, salt, and pepper as desired.
- Top with feta cheese crumbles.
