“Hard to Beet” Hummus

Ingredients
  

  • 2 medium beets, washed and scrubbed
  • 1/2 Tbsp extra-virgin olive oil
  • 1/4 cup hickpeas, rinsed and drained
  • 1/4 cup tahini
  • 1 Tbsp lemon juice
  • 1/2 clove garlic
  • 1/4 cup water
  • 1 tsp black and white sesame seeds (garnish)
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 400°F/200°C.
  • Drizzle beets with olive oil and sprinkle with salt. Place on a baking sheet and roast for 45 minutes, or until easily pierced with a knife.
  • Allow the beets to cool completely, then remove skins (should come off easily with your hands) and chop coarsely.
  • Add chopped beets, chickpeas, tahini, lemon juice, garlic, and pepper to a food processor. Add water and process mixture until very smooth (add more water than called for to get thinner consistency).
  • Garnish with black and white sesame seeds. Store in a fridge for up to one week.
