Honey Berry Quinoa

Ingredients
- 1/4 cup quinoa, uncooked
- 1 cup water
- 2 Tbsp extra-virgin olive oil
- 1 Tbsp honey
- 1 lime, juiced
- 1/4 tsp sea salt
- 1/4 cup blueberries
- 1/4 cup raspberries
- 1/4 cup strawberries, sliced
- 1 oz fresh mint, chopped
- 1 Tbsp almonds, sliced
- 1 Tbs pistachios, chopped
Instructions
- In a medium pot over high heat, add quinoa to water. Allow water to come to boil, then reduce heat and simmer quinoa until water is gone, about 10-15 minutes.
- Remove the pot from heat and allow quinoa to cool before transferring to large bowl. Set aside to cool completely.
- For the dressing, whisk together extra-virgin olive oil, honey, and lime juice in a small bowl. Set aside.
- Add fresh berries and mint to the large bowl of cooled quinoa. Pour dressing over the top and gently stir together.
- Garnish with sliced almonds, chopped pistachios, and more chopped mint, if desired.
