Baked Omelette Rolls

Ingredients
- 2 eggs
- 1/4 cup almond milk
- 1 tsp almond flour
- 2 Tbsp shredded cheddar cheese
- 2 radishes, cut into thin rings
- Seasonal greens and radishes (optional)
- Extra-virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 450°F/230°C.
- Lightly grease a baking pan with olive oil.
- Combine eggs, almond milk, almond flour, salt and pepper in a blender. Put lid on blender and process until smooth. Pour mixture into prepared baking pan and bake in preheated oven until set, about 20 minutes.
- Sprinkle with cheese. Carefully loosen edges of omelet from pan. Starting from the short edge of the pan, carefully roll up the omelette.
- Place the omelette on a serving plate together with some seasonal greens and radishes.
