Ingredients
  

  • 1/2 zucchini, cut into strips
  • 1/2 apple, sliced
  • 2 oz melon, peeled, sliced
  • 1/4 pomegranate
  • 2 oz tofu, cubed
  • 2 Tbsp walnuts, chopped finely
  • 1 Tbsp extra-virgin olive oil
  • 1 tsp balsamic vinegar
  • Salt and pepper

Instructions
 

  • Place tofu on a plate, along with zucchini strips, sliced apple, and sliced melon.
  • Scoop seeds out of the pomegranate.
  • Top the salad with pomegranate seeds and chopped walnuts. Season to taste.
