Ingredients
  

  • 2 large eggs
  • 1 Tbsp unsweetened almond milk
  • 1 Tbsp goat cheese, crumbled
  • 1 Tbsp olive oil
  • 1 tomato
  • 1/2 cucumber
  • Salt and pepper to taste

Instructions
 

  • Place a skillet on medium heat to preheat.
  • Break eggs into a bowl and whisk briskly for 30-60 seconds with almond milk, salt, and pepper. Make sure eggs are fully broken up and mixed well with the milk and seasonings.
  • With heat on medium/medium low, lightly grease a hot skillet with thin layer of oil. Pour eggs into the skillet and use spatula to pull cooked outer edges toward the center. Uncooked eggs will move to the outer edges. Repeat pulling cooked eggs toward center as needed until no uncooked egg moves to outer edges (will be slightly runny).
  • If adding cheese, sprinkle into the skillet.
  • Quickly turn undercooked areas to break up the scramble and keep it moving to make sure all surfaces cook evenly. Contact with a hot surface for too long will overcook the scramble. Turn off the heat when the eggs are 90% cooked.
  • Serve the eggs immediately when done, along with sliced tomatoes and cucumbers on the side.
