Florentine Omelette

Ingredients
- 2 eggs
- 1 cup baby spinach leaves
- 1 Tbsp grated parmesan cheese
- 1/4 tsp onion powder
- 1/4 tsp ground nutmeg
- Extra-virgin olive oil
- Salt and pepper to taste
Instructions
- Beat the eggs in a medium bowl. Stir in baby spinach and parmesan cheese. Season with onion powder, nutmeg, salt, and pepper.
- Heat a skillet over medium heat and add olive oil to coat the pan. Cook the egg mixture for about 3 minutes until partially set. Flip with spatula and continue cooking 2-3 minutes.
- Reduce heat to low and continue cooking 2-3 minutes, or to desired doneness.
