Ingredients
  

  • 2 eggs
  • 1 cup baby spinach leaves
  • 1 Tbsp grated parmesan cheese
  • 1/4 tsp onion powder
  • 1/4 tsp ground nutmeg
  • Extra-virgin olive oil
  • Salt and pepper to taste

Instructions
 

  • Beat the eggs in a medium bowl. Stir in baby spinach and parmesan cheese. Season with onion powder, nutmeg, salt, and pepper.
  • Heat a skillet over medium heat and add olive oil to coat the pan. Cook the egg mixture for about 3 minutes until partially set. Flip with spatula and continue cooking 2-3 minutes.
  • Reduce heat to low and continue cooking 2-3 minutes, or to desired doneness.
