Filet Mignon with Herbs

Ingredients
- Extra-virgin olive oil
- 6 oz filet mignon
- 1 Tbsp butter
- 1/2 tsp rosemary, roughly chopped
- 1 cup spinach
- 1 tomato, sliced
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F/200°C.
- In a skillet over medium-high heat, heat olive oil.
- Season filet mignon with salt and pepper on both sides. When oil is just about to smoke, add the steak. Cook on one side until very seared, about 5 minutes. Flip the filet and add butter and rosemary. Baste the filet with butter and cook another 3-5 minutes.
- Transfer the skillet to oven and finish cooking the filet to your preference, about 5 minutes for medium. Check temperature of the meat before transferring to the oven to see how far you are from desired temperature. If you are within 10 degrees, you may need even less time. If your steak isn't done after 5 minutes, check every couple of minutes so you don't risk over cooking. Remove from pan.
- Serve with spinach and tomato. Season to taste.
