Ingredients
- 2 eggs
- 7 sundried tomatoes
- 1/2 cup fresh arugula
- 6 small mozzarella balls
- 6 black olives
- 1 cup mixed greens
- Roasted paprika to taste
- Extra-virgin olive oil
- Balsamic vinegar
- Salt and pepper to taste
Instructions
- Boil eggs in a pot of water over high heat, then drain and rinse with cold water. Peel and cut into slices.
- Wash arugula and let dry. Cut sun-dried tomatoes into thin slices. Arrange arugula and mixed greens on a plate and put the sliced eggs, dried tomatoes, olives, and mozzarella on top. Season with salt, pepper, and roasted paprika.
- Drizzle with olive oil and balsamic vinegar, as desired.
