Ingredients
  

  • 2 eggs
  • 7 sundried tomatoes
  • 1/2 cup fresh arugula
  • 6 small mozzarella balls
  • 6 black olives
  • 1 cup mixed greens
  • Roasted paprika to taste
  • Extra-virgin olive oil
  • Balsamic vinegar
  • Salt and pepper to taste

Instructions
 

  • Boil eggs in a pot of water over high heat, then drain and rinse with cold water. Peel and cut into slices.
  • Wash arugula and let dry. Cut sun-dried tomatoes into thin slices. Arrange arugula and mixed greens on a plate and put the sliced eggs, dried tomatoes, olives, and mozzarella on top. Season with salt, pepper, and roasted paprika.
  • Drizzle with olive oil and balsamic vinegar, as desired.
