Creamy Seared Scallops

Learn how to make delicious and healthy creamy seared scallops by following an easy step by step recipe. Serves 1 person. Multiply by number of servings needed.
Ingredients
- 4 scallops
- 2 eggs
- 1/2 lemon for zest
- 1/2 tbsp basil, finely chopped
- 1 cup mixed greens
- 1 tsp butter
- 1/4 lb purple cabbage, chopped
- 2 tbsp extra-virgin olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Whisk lemon juice, olive oil, and salt together. Set aside.
- Place eggs in small pot with water and bring to the boil. Boil for 2 minutes and 15 seconds (for soft boiled eggs with runny yolks). Drain hot water and run eggs under cold water. Peel eggs and set aside.
- Heat olive oil in small frying pan. Mix lemon zest and herbs together. Fry for a couple minutes. Transfer to paper towel to drain. Mix with a good pinch of salt.
- Heat butter in a frying pan on high heat. Add scallops to hot pan and cook for 45 seconds on each side, seasoning with salt and pepper while in the pan.
- Put scallops on plate on top of mixed greens and chopped purple cabbage. Carefully cut eggs in half and arrange on plate. Drizzle with olive oil and sprinkle with the lemon zest/herb mixture.
- Drizzle creamy lemon dressing over everything just before serving.
