Chopped Vegetable Salad

Ingredients
- 1 ar of corn
- 1/6 lb green beans, diced
- 1 plum tomato, seeded and diced
- 1/4 lb tofu
- 1 bell pepper, seeded, deveined, diced
- 1/4 small red onion, diced
- 1/4 cucumber, peeled, seeded, diced
- 1/4 medium jalapeno pepper, seeded, deveined, finely chopped
- 1/4 cup cilantro leaves, roughly chopped
- Extra-virgin olive oil
- Rice wine vinegar
- Salt and pepper
Instructions
- Chop all the ingredients.
- Fill a large bowl with ice water. Set aside.
- Bring a medium saucepan of salted water to a boil. Add corn cob and cook until just tender, about 5 minutes. Remove from boiling water and place immediately in ice water. Once cool, remove and slice kernels from the cob. Place kernels in a large bowl.
- Add green beans to boiling water. Cook until just tender, about 1 minute. Remove from boiling water and place in ice bath. Once cooled, drain beans well, and add to the corn.
- Add chopped tomato, bell pepper, tofu, onion, cucumber, jalapeno, and cilantro to the bowl and stir to combine. Add olive oil, rice wine vinegar, salt, and pepper. Stir to combine. Taste and adjust seasoning as needed.
