Ingredients
- 4 oz fresh mozzarella
- 2 tomatoes
- Basil leaves
- Extra-virgin olive oil
- 1 cup balsamic vinegar
- 2 tsp honey
- Salt and pepper to taste
Instructions
- Whisk together balsamic vinegar and honey in a small saucepan. Bring to a simmer over medium heat then reduce heat to low and let glaze simmer until thickened, about 8-10 minutes.
- Pour into a small bowl and let cool to room temperature, about 10 minutes.
- Slice tomato and fresh mozzarella into medium-to-thin slices. Layer tomato slices, mozzerella slices, and basil on a plate.
- Drizzle with olive oil and balsamic glaze. Season with salt and pepper to taste.
