Andalusian Gazpacho

Ingredients
- 1/4 lb chicken breast
- 1 tomato, cored and cut
- 1/4 cucumber, peeled, seeded, and cut
- 1/4 red onion, peeled and cut
- 1/4 bell pepper, cored, seeded, and cut
- 1/2 clove of garlic, peeled and smashed
- 1/6 cup extra-virgin olive oil
- 1/2 Tbsp balsamic vinegar
- 1/2 Tbsp chives, minced finely
- Black olives (garnish)
- Arugula leaves (garnish)
- Salt and pepper to taste
Instructions
- Boil chicken breast until cooked, then cut into small cubes. Place to the side.
- Put tomato, cucumber, onion, pepper, garlic, and salt into a blender. Combine at high speed, slowly drizzling olive oil and balsamic vinegar into the blender as it blends.
- Strain the puree through a fine mesh strainer into a large bowl.
- Add the chicken cubes. Season to taste with salt and black pepper.
- Top with chives, arugula leaves, and black olives.
