Ingredients
  

  • 1/4 lb chicken breast
  • 1 tomato, cored and cut
  • 1/4 cucumber, peeled, seeded, and cut
  • 1/4 red onion, peeled and cut
  • 1/4 bell pepper, cored, seeded, and cut
  • 1/2 clove of garlic, peeled and smashed
  • 1/6 cup extra-virgin olive oil
  • 1/2 Tbsp balsamic vinegar
  • 1/2 Tbsp chives, minced finely
  • Black olives (garnish)
  • Arugula leaves (garnish)
  • Salt and pepper to taste

Instructions
 

  • Boil chicken breast until cooked, then cut into small cubes. Place to the side.
  • Put tomato, cucumber, onion, pepper, garlic, and salt into a blender. Combine at high speed, slowly drizzling olive oil and balsamic vinegar into the blender as it blends.
  • Strain the puree through a fine mesh strainer into a large bowl.
  • Add the chicken cubes. Season to taste with salt and black pepper.
  • Top with chives, arugula leaves, and black olives.
